Sweet Treats

Shrove Tuesday marks the first day of Lent & is traditionally associated with pancakes being eaten! This was the last chance to eat rich foods before Lent began & was an opportunity to use up all of the luxury foods, such as fat, butter & eggs.

 

INGREDIENTS:
100g Plain Flour
2 Eggs
300ml Milk
Pinch Salt

MAKES:
8-10 pancakes

NOTES:
Why not add a little cinnamon to the batter or 2 tbsp of coco powder to the batter to make chocolate pancakes.

Step 1: Sift the flour & salt into large mixing bowl, make a well in the middle & crack 2 eggs into it. Then whisk together.

Step 2: Gradually add small amounts of the milk whilst still whisking.  When all of the milk has been added ensure all of the flour from around the edge of the bowl is in the centre, then whisk until the batter is smooth & has the consistency of thin cream.

Step 3: Add a small amount of oil or fry light to the pan, heat the pan until hot then turn down to a medium heat.

Step 4: Using a ladle pour about 2 tbsp of batter into the pan, evenly coat the pan with the batter. It should take around 30-40 secs to cook lift the edge with a palette knife to see if it’s a light golden brown, flip the pancake over with the palette knife & cook the other side for a few seconds.
