SEVILLE ORANGE

INFUSED GIN

The season for Seville’s is relatively short, with the fruit appearing in the Farm Shop in January for approx six weeks, so it’s worth knowing that these fruit freeze exceptionally well.

 

INGREDIENTS:

6 Seville Oranges
1 Litre Gin
100g Caster Sugar
100ml Water

NOTES:

Should keep for up to a year.

Preparation time 15 minutes

Step 1: Carefully remove the zest from the Seville oranges with a grater. The zest is the outer part of the fruit, it has fragrant essential oils in it that will flavour the gin.

Step 2: Place the zest into a glass jar & top with the gin. The zest will start flavouring the gin quickly. Shake the gin a couple of times a day to infuse the gin with the orange. The batch will be infused for 72 hours, by which time it has a lovely bitter orange flavour.

How long you leave your orange gin is very much down to your own taste.

Step 3: Strain the zest through a sieve into clean jug. Heat the caster sugar & water until it dissolves into a sugar syrup. Use to sweeten your bitter orange infusion.

Step 4: Finally pour into a clean sterlised bottle & label.
